- 2 lb chicken breast
- 1 cup mozzerlla cheese
- 1/4 cup parmesan cheese
- 1/4 cup almond flour
- 2 tbsp fresh chives
- 2 large eggs
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions
- In a large bowl mix chicken, cheeses, almond flour, chives, eggs. garlic powder, salt and pepper.
- Let chill for 60 minutes
- Add olive oil to skillet over medium heat. Scoop 1/4 cup chicken mixture at a time and add to hot pan. Fry for 4-5 minutes per side, until golden brown and cooked through.
